Using a pair of tongs carefully remove chips from air fryer to plate. Using a mandoline or vegetable peeler cut potatoes into very thin slices.
Preheat a 3 5 quart air fryer to 320 degrees f.

Shingle the potatoes in the bottom of the basket. Pour out water cover potatoes with fresh water and soak for an additional 15 minutes. It s okay if there are two layers.
Sprinkle the potatoes with salt. Spray the air fryer basket tray with oil to minimize sticking. Lay potato slices in single layer trying to not overlap slices.
Preheat air fryer to 360. Meanwhile preheat the air fryer to 400 degrees f 200 degrees c for 10 minutes. Place half of the potato slices in the basket and cook in two batches at 375 f until cooked through and crispy about 25 to 30 minutes.
Lightly coat air fryer basket with cooking spray.
